Frozen Smoothie Pops {Easy & Healthy Summer Snack}

A couple of weeks ago, I shared our family’s favorite mix-and-match smoothies. My girls had been begging me to freeze some of the leftovers into smoothie pops…except we don’t usually have leftovers.

The other day I finally decided to make and freeze a bunch of popsicles since it’s such an easy and healthy summer snack. The possibilities are virtually endless, but we did strawberry/blueberry/peach, pineapple/banana and Genesis Today Superfruit Lemonade.

Ingredients/Supplies:

  • Fresh/frozen fruit or any fruit juice
  • Small paper cups
  • Popsicle sticks
  • Something to cover the cups

Directions:

To make, start by blending any combination of fruit.  This is a great way to use overripe fruit, and since it’s going right back into the freezer, it doesn’t need to be frozen ahead of time. If using juice, you can obviously skip this step!

Pour the mixture into your cups. Because they weren’t frozen, they weren’t thick enough to hold our popsicle sticks. I didn’t really want to stick them in the freezer uncovered anyway, so I tore a slit in the middle of each piece of foil and slid it over the stick. We used foil this time, but I’m thinking paper cupcake liners would be a more eco-friendly, inexpensive option next go around.

Freeze for several hours.

Tear off the paper cup. If the cup is too hard to remove, either let it set for a moment or — if you’re impatient like us — run it under water for just a second and it should peel right off.
