It’s Week 2 of Instant Pot July! We hope you have joined us for this challenge and have begun incorporating these amazing recipes into your meal planning!
If you’ve caught the IP bug like we have, you’ve been using this tool to make anything and everything you can. When I was first introduced to the Instant Pot, I was concerned that all of the recipes it could make would all be warm and wintery – those soups, stews, and roasts that are comfort foods we crave during the cooler months. My assumptions about the Instant Pot have been proven wrong and I’ve been so impressed by all the “summer-y” foods I have made.

Here’s what we made: Week Two
I’ve found that the Instant Pot is actually perfect for this time of year: friends and family visiting, picnics, potlucks, and BBQ’s to attend. All of these festivities mean lots of cooking and the IP truly saves you time so that you can spend more time with your loved ones. With that, here are the wonderful challenge recipes that I made this week! Keep reading to learn more about how I used the recipes and for more resources.
Instant Pot Salted Caramel Cheesecake with Grain Free Almond-Pecan Crust
That’s right. We made CHEESECAKE in a pressure cooker. I had no idea this was possible, but it is! This cheesecake recipe is nutty and creamy. (Don’t skip the strawberry sauce that goes with it — it’s the perfect complement to the dessert.) You are going to love it! As a note for this recipe, make sure you have a springform pan that will fit inside of your Instant Pot. You can find smaller versions on Amazon if your local stores do not carry one. I used an 8 inch pan in my 6 quart IP and it fit, but quite snugly. There is also a tip in the instructions to add a tinfoil sling before you add in the unbaked cheesecake. Please don’t miss this! It’s vital for removing your cheesecake when it is done cooking.
Instant Pot Strawberry Chia Jelly (Honey-sweetened)
I regularly purchase Strawberry Chia jelly from our local grocery store, but I had never made my own until this week. Not only is it honey sweetened, but its just three ingredients, easy, and delicious. I doubt I will ever have to purchase jelly again. The directions for this recipe do not include water. Almost every single pressure cooker recipe requires water to build the pressure to cook the food. This recipe works without it, so trust the recipe and go for it!
Best Ever Instant Pot Chili (using dried beans)
If you needed any additional reasons to be sold on the IP, it would be cooking a recipe that includes dried beans, without soaking them… in just about one hour. That’s amazing! Not only does this save time, but it also saves money too. Dried beans are much cheaper than canned beans and using them reduces the amount of added preservatives you consume. This chili recipe is easily frozen (if you don’t know this already, Plan to Eat has a Freezer feature that allows you to keep track of your frozen meals) and also another great recipe for repurposing for other meals: In the summer, we frequently have bonfires at our house and this chili made amazing chili-dogs. Have you ever tried chili nachos? Your kids will love it!
