Pancake Parfaits

I have this thing for parfaits. I don’t think I had a thing for parfaits before I saw the movie Shrek – but after that, I was done-in. Now, I fix them regularly. And I quote the movie.

Pancake Parfait 1

The best thing about parfaits is that they’re so EASY to fix! You can make them using anything you have laying around – with the exception of sardines. Please do not make a Sardine Parfait. This has been a public service announcement.

Most people consider parfaits to be a dessert food – with cake, pudding and ice cream. While that just makes me giddy with delight, I’ll be honest…dessert isn’t my favorite. Wanna know what’s my favorite? I’ll tell you – BREAKFAST.

Then you get into the breakfast parfait thing and you have the same ole, same ole: yogurt, granola, and fruit. While I love granola as much as the next person, sometimes you gotta shake things up. Sometimes you gotta swim upstream. Sometimes you gotta go against the flow.

This parfait uses pancakes. I know – it’s genius. Our family loves pancakes and we have them at least once a week, usually more often than that. Most of the time I serve my pancakes with sweetened Greek yogurt and berries on top…so when I had the idea to just throw it all in a glass and call it a parfait, it was one of those light bulb moments.

Now you can take pancakes ON THE GO. I’m not 100% certain, but I think this might be in the running for the Nobel Peace Prize. Or the Stanley Cup. Or the Guinness Book of World Records. One of those – I’m not a sports fan, so I’m unsure.

You can make these using whatever pancake recipe you like – also use whatever fruit you have on hand and your yogurt of choice. I like Greek because it’s so thick and luxurious – like yogurt for rich people. Finish it off with a dollop of granola for a pretty presentation and a little extra crunch – because I like crunchy food…unless it’s sardines. *Shiver*

So, go forth and make Pancake Parfaits and eat them in the car. And laugh at all those sorry souls in line at the Hardee’s (or Carl’s Jr. for all you folks out west) drive thru. Poor guys – they should have made a parfait.

NOTE: If you’re a Trim Healthy Mama, you can make this a GREAT E breakfast. Use the Trim Healthy Pancakes in the book, ½ cup 0% stevia sweetened Greek yogurt, and chopped fruit of your choice. Top with 1 tablespoon Crunchy Coconut Granola and you’ve got breakfast in a cup!

Pancake Parfaits

Serves: 1

Ingredients

  • 1 serving of pancakes of your desire cut into pieces
  • 1/2 cup yogurt (we like Greek)
  • 3/4-1 cup chopped fresh fruit
  • 1 tablespoon granola

Directions

  1. In a parfait glass or mason jar, layer ingredients: pancake pieces, yogurt, berries – repeat until all ingredients are gone.
  2. Top with granola.
